Baking Ideas ... Muffin Flavors

Many muffins seem to be a combination of two different flavors such as lemon poppy seed, apple cinnamon, or rhubarb mint.

Here are a few combinations that you might not have considered. I tried to make the texture of one of the flavor "smooth" like vanilla and one "lumpy" like blueberries. I also have the smooth flavors as stronger ones that one you probably wouldn't add as much of, and the lumpy flavors you would add more of. So, you would add less vanilla or espresso and more blueberries or apples.

Some of these don't sound that great, but others might be worth a try. Hmmm... Mocha Rhubarb, might be a bit too exotic for me. Espresso Walnut and Chocolate with anything sounds nice though.

Here's the blueberry muffin recipie from wikipedia, which I've altered to be used with the above chart. Oh, and I also made the recipie vegan. Any batch of muffins made with this chart should be considered experimental.

1¾ cups (420g) flour
1/3 cup (160ml) sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg replacer
¾ cup (180ml) soy milk
¼ cup (60ml) cooking oil
¾ cup (180ml) lumpy ingredient (apple, banana, blueberry, etc)
¼ cup (60ml) smooth ingredient (chocolate, cinnamon, espresso, etc)

Bake in preheated 400 degree oven for 15-20 minutes.

Having a base muffin recipe is an excellent suggestion, especially as I have the word recipe in the title of this page. I did design the grid so that if you used it to make muffins you would use much more of the "lumpy" ingredient (say about a cup) than the "smooth" ingredient (say about 3 tablespoons).

I like some of the combinations above and would like to try them. Is there a basic muffin recipe you can suggest? Some of these would make great ice cream combinations too, for those who make their own ice cream. I don't but am often tempted and some of the above combos sure make a good case for it! wb
